Our anchovy partner is third generation packer from the island of Sicily, the anchovies are fished by small boats and purse seine nets set on the dense schools of anchovies around the island, towards the Southern foot of Italy and North of Tunisia, they are filletted, salted and processed by hand with the addition of a delicious green and fruity local olive oil. Anchovies are widely used in fish and even animal feed, fertiliser and fish oils which often represents a poor protein conversion ratio and so many environmentalists recommend eating anchovies directly. They should be used as a cooking condiment and provide an intense flavour in salads and sauces.
